Pumpkin-Chocolate Chip Protein Bites

Isn't fall the best season of the year?  The other day we woke up to cooler temps and foggy skies.  It was such a cozy morning to just sip coffee, listen to my favorite autumn music, and relax with the kids.  I wanted to make something seasonal but really didn't want to take the time to bake.  So I came up with these healthy treats, with my favorite flavor combination of pumpkin and chocolate.  The kids loved them, and they made the perfect quick snack before my afternoon run.  The protein and fiber makes them filling, and they taste like a little bite of autumn. 

  • 1 cup oats
  • 1/4 cup pumpkin puree
  • 1/4 cup vanilla protein powder
  • 2 Tbsp honey
  • 3/4 tsp pumpkin spice seasoning
  • 2 Tbsp ground flaxseeds (I throw them in whole and they grind up perfectly in my food processor with the other ingredients)
  • 1/4 cup almonds
  • 1/2 tsp vanilla extract
  • 2 Tbsp nut butter (I used cashew butter, you could use peanut butter)
  • 1 stevia packet (OR use 1 tsp brown sugar if you find stevia bitter)
  • pinch of salt
  • 1/2 cup mini chocolate chips
Blend all ingredients except the chocolate chips together in a food processor.  Scrape into a bowl.  Add the chocolate chips and use your hands to incorporate the chips evenly, as though you were kneading bread.  Roll into bite sized balls and store in a covered container in the fridge. 

*Optional- Sprinkle with sea salt after you have formed them into balls, or try dusting them lightly with cocoa powder.
