Healthy "Ice-Cream" - 3 versions

Need a recipe to beat the heat minus the guilt?  Here it is.  Having frozen banana slices on hand ensures that you're only 5 minutes away from creamy, healthy "ice-cream."  I buy 2 or 3 bunches of bananas each time I go to the grocery store.  When they start to get really ripe and full of brown spots, I slice them up and throw them in the freezer.  Then when a craving for ice-cream hits, simply throw them in the food processor with a mix-in of your choice, and voila - a super healthy and delicious treat with no added sugar!  Since I could eat ice-cream 3 times a day in the summer, this recipe is a healthier way to indulge.  No more jealous looks at my kids happily enjoying their regular ice-cream without a care!

*3 versions - directions follow

Coconut-Chocolate Chip:
  • 1 cup frozen banana slices
  • 2 Tbsp cocoa powder
  • 1/2 cup canned lite coconut milk (unsweetened)
  • 1/4 cup mini chocolate chips

  • 1 cup frozen banana slices
  • 1/2 cup raspberries
  • 1/2 cup almond or coconut milk
  • 1/2 tsp vanilla extract

Chocolate-Peanut Butter:
  • 1 cup frozen banana slices
  • 1 Tbsp cocoa powder
  • 1/4 cup creamy peanut butter
  • 1/2 cup almond milk

*Optional:  Use 1 Tbsp of PB2 powdered peanut butter in place of the regular peanut butter to cut the fat.

1.  Place the all of the ingredients in the food processor.  Blend until smooth.

2.  Scrape into 1 bowl (or 2 if you're going to be nice and share), and set in the freezer for 10-20 minutes.

3.  Enjoy!

*This is best if not made in advance.  You can freeze it overnight or longer, but you'll have to remove it and let it thaw for an hour or longer before eating, as it freezes solid.  I am just not that patient!
