Blueberry Breeze (Juice or Smoothie)


Blueberries are one of the most important of the superfoods.  They contain the antioxidant anthocyanin, which has just recently been shown to improve memory.  They may lower your risk of age-related macular degeneration.  The phenolic compounds inhibit cancer cell growth in the colon, and they are thought to break down belly fat.  Those are just a few of the health benefits, need any more?  I buy large bags of organic frozen blueberries since studies have shown that the anthocyanins do not break down from freezing.  This way they are more affordable, always in season, and always on hand. 


1 cup blueberries (frozen)
1/2 cup pineapple (or a banana)
1 pear (I used an Asian pear)
1 stalk of bok choy
3 Romaine lettuce leaves
3 springs of flat-leaf parsley
1 cup of water

*optional 1/2-1 cup of coconut milk

As always start with the pineapple and pear in the bottom of the blender, then the leaves, and finally the blueberries.  If using a juicer, run all ingredients through and mix with the optional coconut milk, you will not need water.
